As you, my readers, may know, I have been making good tasting, nonfat ice creams using coconut milk, my Vitamix, and my ice cream machine.
I wasn’t happy about the great amount of saturated fat in the coconut milk. Yes, the Pacific Islanders eat lots of coconuts, and they suffer few ill effects. But saturated fat is known to be bad for your heart. The jury still is out concerning just how bad the saturated fat in coconut milk is for you.
Last week I bought Slow Churned, half the fat, real ice cream, put it in the freezer, and decided to eat only small portions. That did not work. I realized I was an ice cream addict. I devoured the bottom half of the ice cream container last evening.
I recently had scoured the internet for very low fat almond milk ice cream recipes. An hour ago I tried what I thought would be the tastiest almond milk ice cream. It was not.
I have decided to finally accept my wife’s suggestion as my new reality. I will not make ice cream. I will not bring ice cream into the house. Instead, I will eat single servings of ice cream out of the house when I crave it.
I have plenty uses for my Vitamix – such as making smoothies and soups. As for my ice cream machine, I plan to paste a large label on it that says, “It was a great adventure, but I opted for a healthy life.”
The question this evening, as I prepare for bed, is, will I sleep well? Rumbling in my tummy gives me doubts.
My theory is that I went to such an extreme as to eat three-plus cups of ice cream just to make two “I Scream” statements: “No more ice cream in my house!” and “No more ice cream hobbies!”
I am glad I began a new, healthier hobby recently: making homemade granola from oats, nuts, seeds, and honey.
Thank you, please God, for letting me survive this night so I can eat healthier.
