For two weeks now I have been making dairy-free, coconut-milk-based, ice cream recipes, enjoying the different flavors: Pistachio, chocolate, vanilla, cherry, blueberry, strawberry, butter pecan, Swiss almond, coffee, maple walnut.
This afternoon I decided to go creative. I made my first unique recipe, and I wrote it down. Tonight when I tasted my first invention, I went bonkers.
I thought I had made something that no one had made before. A taste of a far off memory from my childhood. Then it came to me: Fudgesicle. That's what it was! I Googled a dozen Fudgesicle recipes to see if their ingredients matched mine.
My ingredients had a special element that no one had ever thought of: High-fiber cereal. It was so good that I finished half of my production at one sitting.
Here is how I made it:
1 cup coconut milk
1 cup almond milk
2/3 cup high-fiber cereal
1 frozen banana
1/3 cup chocolate chips
1/3 cup toasted pecans
1/2 cup honey
1/2 tsp. guar gum
1 tbsp. cocoa powder
Blend all ingredients on high-speed in a Vitamix for one minute. Allow batter to chill in the refrigerator. Transfer to an ice cream maker, then to the freezer.
Even though I enjoyed the different ice cream flavors, I don't know when I would have gone back to make more of them. But I certainly will go back to make more of this Fudgesicle ice cream. I wonder what else I can invent that will also turn out to be extraordinary. Come to think of it, that's really a part of the joy of having hobbies, that I can experiment, and find new applications and tastes to enjoy.
